Ceylon cinnamon has a more sweet flavour and delicate aroma as compared to Cassia cinnamon. But, the most significant difference is the presence of the plant coumarin, which is a natural chemical that functions as a blood thinner.
Cassia cinnamon contains very high amounts (about 0.4-0.8 %) of coumarin which carry the risk of causing liver damage in those who are sensitive, which is the reason why certain European countries have prohibited the Cassia variety.
How do you identify Ceylon cinnamon?
Ceylon Cinnamon is tan-brown in colour while Cassia Cinnamon is dark brown-reddish. In terms of texture, Ceylon Cinnamon is thin and papery whereas regular cinnamon is thick.
